Superbowl Sunday is here. I don’t actually watch the event. I was brought up on Australian Football, Aussie Rules and Rugby League, and cannot get excited about American Football. Too much down time for me. I can, however appreciate the event and more importantly the food.

Even though I wont be watching any sports this evening, I am enjoying a batch of delicious taco’s.

I used packaged taco shells, but if you want to be super healthy, you can also use lettuce leaves or any other green leafy.

The “meat” is made from almonds, walnuts and mushrooms. Topped with salsa and fresh sliced avocado these taco’s are delicious. I bet you cannot stop at eating just one. I had four 🙂

Almond Walnut Taco’s

Makes 12

  • 1 cup walnuts soaked in water for two hours
  • 1 cup almonds soaked in water for two hours
  • 4oz mushrooms roughly sliced
  • 1 Tblspn chilli powder
  • 1 Tblspn cumin
  • 1 tspn coriander
  • 2 cloves garlic roughly chopped
  • 1/4 tspn cinnamon
  • 1/4 tspn cayenne pepper
  • 1 Tblspn balsamic vinegar
  • 1 Tblspn tamari
  • 1 avocado diced
  • Salsa plus any other toppings you like lettuce, cucumber etc

Drain almonds and walnuts. Place in food processor with all other ingredients and pulse until thoroughly chopped with fine texture.

Fill Taco shells with Almond Walnut meat and top with salsa, avocado and any other toppings you like.
