Wow, we are at recipe 16 already, only 4 more to go for September. I hope you all have had as much fun as I have visiting all the other wonderful vegan blogs.
Well, it is Sunday again, and so here is another soup. The leaves you see in the picture are from my back yard. There was one there in the morning and then when I went out again around lunch time, there was a light layer of them. It is almost like once the first leaf fell, the others all said…..lets go.
With Fall officially here, a nice big bowl of Heatry Split Pea Soup seem very appropriate.
Hearty Split Pea Soup
- 1 cup dry split peas
- 6 cups water
- 2 bay leaves
- Sea salt
- ½ tbspn olive oil
- 1 small onion chopped
- 2 stalks celery chopped
- 2 carrots chopped
- 2 cups vegetable stock
- 1 cup potato chopped
- 3 cups water
- ½ tspn fresh thyme chopped
Add dry peas to the 6 cups water with 1 bay leaf and pinch of sea salt in large pot. Bring to a boil, reduce heat to medium and cook 10 mins. Drain, remove bay leaf and discard.
Heat olive oil in large pot on medium . Add celery, onion and carrots. Saute for 8 mins until soft.
Add broth, 1 bay leaf, potato’s, peas and thyme. Bring to a boil then reduce heat, cover and simmer for one hour stirring occasionally.
Add salt and pepper to taste.
Allow to cool slightly, then transfer to blender and blend until smooth. Be very careful to only fill the blender jug half full, to prevent steam from building up.
