Driving home last night, I noticed a long line up at the local ice cream franchise. People were literally standing in line from the counter, out the front door and almost to the car park. With the warmer weather finally making an appearance, a nice cold creamy treat is exactly what is needed.
Now, being vegan, regular ice cream is no longer on the menu, but I do not have to miss out on a yummy creamy frozen treat. Believe it or not, you can make a soft serve “ice cream” at home very easily.
All you need is banana’s and a blender/food processor. When I first read about this I was sceptical, but it really does work.
Banana soft serve
Take a perfectly ripe banana (no brown spots), peel and break into chunks and freeze. I try to keep bags of frozen banana on hand at all times. One banana will make two small, or one nice size serving.
Take frozen banana and put into a good blender or food processor and blend until it “magically” turns into soft serve. This can take a couple of mins depending on your appliance. Make sure you “taste test” to see if it is ready. It will start off “gluey” but if you keep going it will turn creamy.
My granddaughter loves this. She really enjoyed making this with me and immediately came up with a long list of possible additions. Strawberries, blueberries, pineapple, mango and of course candy (she is 7 after all and I was actually very proud that her first thoughts went to fruit). We have decided we will spend the summer experimenting with fruit combo’s.
We will also be visiting our local “pick your own” berry farm so bananaberry soft serve will certainly be a regular. I have also seen suggestions of adding cacao or cocoa for a chocolate version, the options are truly endless.
